The transformation of glucoraphanin into sulforaphane occurs under the influence of an enzyme contained in broccoli tissues. However, this is not the only way of this transformation, because it can also take place - although less effectively - through probiotic bacteria inhabiting the large intestine. Glucoraphanin supplementation demonstrates most of its effectiveness by stimulating the production of sulforaphane.
Sulforaphane
Sulforaphane is an isothiocyanate found in some cruciferous vegetables, but its highest concentration is certainly found in broccoli and its sprouts. In the latter, however, the most important thing is the germination time, because sulforaphane in high concentrations is present only a few days after germination. Over time, its amount decreases dramatically. This compound is produced from glucosinolate, and more precisely from the above-mentioned glucoraphanin, which is hydrolyzed thanks to the catalyst - myrosinazyl. Maintaining a stable form of sulforaphane and glucoraphanin in broccoli is in practice extremely difficult, because this enzyme is highly thermolabile - released when crushing plant tissue, and at the same time denatured during cooking. For this reason, the formation of active sulforaphane is significantly limited. Although it is possible to produce this compound in the large intestine under the influence of the microbiome, it is produced with the participation of intestinal bacteria and has much lower bioavailability.
