We obtained most of the enzymes in the product using fungi of the Aspergillus genus (aspergillus), e.g. Aspergillus oryzae and Aspergillus niger. Both mushrooms are also used for other applications, e.g. Aspergillus oryzae is used in the production of Japanese sake. In turn, the most common source of papain is papaya fruit, and bromelain - pineapple.
