Organic extra-virgin olive oil of very high quality from a farm in southern Sicily. Olive oil has an organic certificate and a certificate of origin and quality D.O.P. Monte Iblei from the Italian Ministry of Agriculture. This control and certification guarantees that it is 100% pure olive oil from this area and that the pressing took place without heat and chemicals. Cultivation takes place completely in accordance with ecological principles and has a BIO certificate.
It's oil from one farm. This means that olives from other people's collections are not covered by this amazing olive oil. Every olive that has contributed to the emergence of olive oil is carefully studied. No outsider had access to trees, harvesting, squeezing or storage at any stage.
The trees are of the Tonda Iblea variety, which is only grown in the Ragusa Valley in Sicily. This variety of olives has been recognized as the best olive oil in the world. Olives are picked by hand and pressed within a few hours into a beautiful thick oil, which rests in a steel tank for several months to clean and become more durable over time. It is bottled in late spring.
