Beta-glucans (β-glucans) are a group of naturally occurring polysaccharides found in the cell walls of bacteria, yeast, fungi, algae and plants such as oats and barley. Being so diverse in origin, beta glucans differ in specific biological properties. All beta glucans belong to the soluble dietary fiber fraction.

Structurally, beta glucans are polymers of short or long chains, composed of glucose units linked by beta glycosidic bonds. Depending on the binding, isomers are formed. The type of connection indicates the origin of the beta glucan in question. Mushroom beta glucans have short chains connected by 1.6 linkages, while yeast ones are more extensive, having 1.6 with 1.3 side branches, hence the designation 1.3-1.6.
